The Zagorian Alevropita (flour pie) is a dish that we discovered during our last trip in Zagorochoria. We loved it from the very first bite! It is a traditional pie, served on every Zagorian table. With very few materials, in little time, you will have a delicious salty pie. You can have it as a main course or a side dish or as a snack accompanying your tsipouro or wine, or even as breakfast. It is made with delicious Greek feta and it goes perfectly with sweet jam. Everybody is going to love it!

Materials for a pan 40×35 (low):
- 370gr All purpose flour
- 400gr Feta (250 in the mix and 150 on top)
- 3 Eggs (2 in the mix + 1 before it gets in the oven)
- 250ml Milk
- 50gr Fresh butter
- 70ml Olive oil
- A little water
- 1 teaspoon Spicy pepper seeds (optional)
- 50gr Home-made jam (per serving)
Execution::
Step 1:
We turn on the oven to 250°C (approximately) and let it warm up, while we smear half the butter and half the oil on the pan. Then we put the pan in the oven for 3-4 minutes.
Step 2:
In a large bowl, we put the flour and pour the 2 eggs, 200gr feta, milk, spicy pepper and start kneading. Towards the end, if the mix is tight, we pour some water, so it becomes softer and it can be spread in the pan.
Step 3:
We take the pan out of the oven and pour the mix, so it is spread evenly.
Step 4:
We grate the rest of the feta, pour the oil and butter and leave it at 180°C for 35-40 minutes (depending on the oven).
Step 5:
When it is brown enough and sticks out of the pan, it means that it is ready. We place it on the counter and cut it into pieces.
Step 6:
It is served with jam (home-made), tsipouro and olives, or anything else you want!
Note:Do not mind if you see a lot of oil while it is in the oven. When you get it out, it will absorb all of it.
The recipe comes from a local homemaker. All we did was add some chili pepper.
